Our Dehydrated Garlic Powder is produced from premium Allium sativum cloves — peeled, sliced, and tunnel-dried at 55–65°C to a moisture of <5%, then milled to 80–100 mesh fine powder. The controlled low-temperature drying preserves alliinase, the enzyme responsible for converting alliin to allicin when rehydrated. Allicin (formed from alliin + alliinase + water) is the primary bioactive organosulfur compound responsible for garlic's cardiovascular, antimicrobial, and immune-boosting properties. 100g powder ≈ 600g fresh garlic. Dehydration concentrates lycopene dramatically — from ~3 mg/100g in fresh tomatoes to 45–120 mg/100g in powder form.
